Millet Groats (Pshyono)
Millet groats, known in Russian as pshyono, are one of the oldest cultivated grains in human history, with a heritage spanning thousands of years across Asia, Africa, and Europe. In Russia, millet porridge has been a beloved staple for centuries, valued for its sunny golden color, mild flavor, and exceptional versatility.
Millet groats are the hulled seeds of the millet plant. They are small, round, and golden-yellow in color, with a delicate texture that becomes soft and creamy when cooked. Unlike many other grains, millet has a naturally sweet and slightly nutty taste that makes it equally suitable for both sweet and savory dishes.
Millet groats of the "Russian Field" brand are an excellent choice for you and your family. They cook quickly and yield a fluffy, tender porridge that is naturally gluten-free, making them a wonderful option for those with gluten sensitivities or celiac disease. These groats are incredibly versatile, perfect for traditional Russian kasha, savory pilafs, casseroles, stuffings, or even as a breakfast cereal with milk and fruit.
One of the key nutritional benefits of millet is its high content of complex carbohydrates, which provide a steady release of energy throughout the day. It is also rich in dietary fiber, which supports healthy digestion and promotes a feeling of fullness. Millet is particularly notable for its high magnesium content, which is important for bone health, muscle function, and heart health. It also contains significant amounts of phosphorus, iron, zinc, and B vitamins, especially niacin (B3) and vitamin B6. Additionally, millet is a good source of antioxidants, including ferulic acid and catechins, which help protect the body from oxidative stress.

This classic recipe yields a creamy, comforting millet porridge. For a sweet breakfast, serve with milk, butter, honey, and fresh or dried fruit. For a savory side dish, pair with sautéed vegetables, mushrooms, or roasted meat.
Ingredients:
-
1 cup millet groats
-
2 cups water or milk (or a combination of both)
-
Salt to taste
-
Butter to taste
Instructions:
Rinse the millet groats thoroughly in several changes of hot water to remove any bitterness. For a fluffier texture, you can toast the rinsed groats in a dry pan for 2–3 minutes until lightly fragrant. Bring the water or milk to a boil, add the rinsed groats and salt. Reduce the heat to low, cover, and simmer for about 15–20 minutes, stirring occasionally, until the liquid is absorbed and the groats are tender. Remove from heat, let stand covered for 5–10 minutes to thicken. Stir in butter to taste, fluff with a fork, and serve warm. Enjoy!
