Buckwheat Groats (Grechka)
Buckwheat groats, known in Russian as grechka, are one of the most beloved and iconic grains in Russian cuisine. Unlike its name suggests, buckwheat is not a type of wheat at all, but rather a seed related to rhubarb. It has been a dietary staple in Russia for centuries, cherished for its robust, nutty flavor and exceptional nutritional value.
Buckwheat groats are the hulled seeds of the buckwheat plant. They are typically roasted to give them a distinctive brown color and a deep, toasty aroma. The groats have a triangular shape and a firm texture that holds up well during cooking, making them ideal for hearty porridges, pilafs, and side dishes.
Buckwheat groats of the "Russian Field" brand are an excellent choice for you and your family. They cook quickly and yield a fluffy, aromatic grain that pairs beautifully with butter, milk, mushrooms, or meat. These groats are incredibly versatile, perfect for traditional Russian kasha, savory salads, stuffings, or even as a gluten-free alternative to rice.
One of the key nutritional benefits of buckwheat is its impressive protein profile. It contains all essential amino acids, making it a complete protein source, which is rare for plant-based foods. Buckwheat is also rich in dietary fiber, which supports healthy digestion and promotes a lasting feeling of fullness. It is naturally gluten-free, making it a wonderful choice for those with gluten sensitivities or celiac disease. Additionally, buckwheat is packed with antioxidants, particularly rutin, which supports heart health and helps maintain healthy blood pressure. It also provides a good amount of B vitamins, iron, magnesium, and zinc.

Try our proven recipe!
This classic recipe yields a fluffy, flavorful buckwheat porridge. For a savory dish, serve with butter, sautéed onions, or mushrooms. For a sweeter breakfast, serve with warm milk, honey, or fresh fruit.
Ingredients:
-
1 cup buckwheat groats
-
2 cups water
-
Salt to taste
-
Butter to taste
Instructions:
Rinse the buckwheat groats thoroughly in cold water until the water runs clear. If using roasted groats (the common brown variety), you can toast them briefly in a dry pan for 1–2 minutes to enhance the nutty flavor. Bring the water to a boil, add the rinsed groats and salt. Reduce the heat to low, cover, and simmer for about 15–20 minutes, until the water is fully absorbed and the groats are tender. Remove from heat, let stand covered for 5–10 minutes to fluff up. Stir in butter to taste, fluff with a fork, and serve warm. Enjoy!
